The Author

Cyrus Todiwala OBE, DL, was born in Bombay and rose the ranks to become Executive Chef of the Taj Group of hotels in India. Looking for a new challenge, he moved to the United Kingdom, where he has subsequently lived for over twenty years.

Cyrus is the author of six books, owner of three restaurants, a passionate campaigner for sustainability and buying British, and perhaps one of his greatest triumphs is being awarded an MBE by HM The Queen for services to education & training. Cyrus also received an OBE for his contribution to the hospitality industry.

Cyrus is the 2014 ‘BBC Food Personality of the Year and Chef Patron of Mr Todiwala’ʹs Kitchen, Cafe Spice Namaste, Assado and The Park Café in Victoria Park East. On top of running three successful businesses, Cyrus teaches, engages in charity work and most importantly knows how to cook and loves to pass on his knowledge to others!

The Rundown

Mr Todiwala’s Spice Box is beautifully presented and illustrated in full colour, and this top selling book provides dishes which also look enticing and captivating when presenting them for consumption (providing you manage to cook them properly that is!).

A nice touch to the book also, is that the recipes and cuisines are categorised and displayed in the book according to spices as opposed to being categorised by the place of origin of the dish, as many other cooking books tend to do. In some ways, this helps an aspiring chef to stay organised when cooking.

The book seems to lean more towards dishes of Indian origin, however, there are dishes included which have originated in a multitude of different countries.

Cyrus reveals his ‘Special Spice Box’ of: Red chilli, Cumin, Coriander, Turmeric, Cardamon, Saffron, Black Mustard Seeds, Mace, Cloves and Cinnamon. The good point about this list of spices is that most readers will likely have many of these spices at home already and won’t therefore, have to go out shopping for rare spices.

The fresh ingredients used are: Curry Leaves, Limes and Lemons, Mint, Coriander, Garlic, Chillies and Onions. Cyrus has also cleverly added alternative ingredient options should anyone not want to use one of his suggested ingredients, and this helps a little with recipe variety.

*Editors note: Unless you love spicey food, for some of the dishes, you may wish to be cautious with quantity of spice you throw in the dish. *It’s very easy to get carried away!*
